Single Varietal Hard Ciders For Everyone

My name is Ethan Keller. I’m a recording and touring artist, born and raised in southeastern Wisconsin. In 2020, because of certain circumstances, my musical performance schedule decreased drastically, yet I was privileged to discover a real opportunity to start my own cidery. I received my winemaking certificate from Texas Tech University in 2023.

Many cider manufacturers overlook single apple varieties, essentially obliterating their identities as they blend them together. Some cidermakers let fermentations go too long, or overmanipulate their products, and lose all the characteristics which make cider cider. This leaves many cider-loving folks who enjoy simplicity, and/or variety feeling overlooked. I merely want to archive apple flavors yearly, and educate people about apple history and cidermaking. This is an important accomplishment. At Cache Cider, everyone can discover a cider that is as unique as they are. Each apple has unique flavor profiles and characteristics. I want to give each apple an opportunity to tell its own story, with minimal intervention; no added sugars, no sulfites, no filters. This simple approach for single-varietal cidermaking has proven to be the remedy to those who love cider, but are continually disappointed with mainstream ciders of lower quality. Ever since I started making cider in 2012, I realized that in trending markets like cider, the increase in quality takes a while to catch up to the increase in quantity. There will always those who come and go trying to be big and trendy, but I figure that if I keep things simple and honest, a pure vision has a foundation and longevity.
